What are the differences between vegetable cream and animal cream? Which Is better?

Animal cream comes straight from milk. On a production level it generally only undergoes a process of concentration of the greasy part and a heat treatment to kill off bacteria. Vegetable cream instead is the result of a technologically longer process, derived from mixing various vegetable oils with the addition of a very sweet sugar and flavouring (usually vanilline).  [ more... ]
How many days can an open pack of cream stay in the fridge?

A couple of days if kept in the fridge. Once the pack has been opened the cream is in contact with oxygen and the rancidisation and oxidation processes begin.
Provolone produced in an area or using aprocess that differs from the one established in the regulations (even if slightly), cannot be certified as Valpadana DOP.
What Is CSQA?

Csqa is a certification orgnisation, it is a third party entity that is in turn checked by an international organisation undertaking checks in companies and it cerifies that the processes are in compliance with technical regulations.
Are preservatives used in your products?

No. Only in Grana Padano there is the use of lysozyme, a protein extracted from eggs that inhibits the development of specific bacteria inside the product.
Why did you choose the name Virgilio?

In the first Canto of Dante’s Divine Commedy, Virgil says: "Not man, man once I was, and my relatives were Lombards, Mantuan they were both". The choice of "Virgilio" arose from the need to find a name that, especially initially, would place the company within its territory of origin which is, precisely, Mantua.
