Cheesecake

Ingredients:
200g plain biscuits
200g softened Virgilio Italian Butter
500g Virgilio Italian Mascarpone
3 eggs
200g sugar
60g flour
1 spoon lemon juice and 1 of orange juice
200g quark cheese (robiola, goat’s cheese, ricotta)
1 sachet of vanilla
Fruit at will (2-3 strawberries)
Method:
Blend the Virgilio Italian Butter with the biscuits in the mixer.
Prepare a hinged cake tin with oven paper underneath and line the tin with the biscuit mix.
Put all the remaining ingredients into the blender except the egg whites which must be whipped until stiff. Add the whites to the mixture.
Pour the mixture into the tin and bake in the oven at 150°C for one hour.
Allow to cool well and add the fruit at will. For example cut strawberries into small pieces, marinade with lemon, sugar and orange juice. Filter the juice and thicken with gelatine. Add the strawberries to the syrup and pour over the cake. It will be ready to eat in 5 to 6 hours.
