Controlled quality: thanks to the production process Virgilio identifies each single piece of cheese, following its progress from the milking process to working, ageing and then sale in the shops. Virgilio allows the consumer to follow the entire process, personally checking the quality of the purchased product: and objective that is constantly pursued with determination.

What is traceability?
It is the process enabling one to retrace the steps of the product through a system that uses information drawn from the various companies making up the production line. The products we consume are more often than not the result of the work of many companies, each company only follows one phase of the production process.
Virgilio has chosen to develop and certify by CSQA a voluntary system of traceability of the production line, with reference to a voluntary national regulation, UNI 10939 as from 2003, even though traceability only became compulsory for all food products or those products contributing to the formation of a food product on 1 January 2005 according to a European Regulation (Reg. 178/02).
The voluntary certification of traceability will nonetheless continue to be meaningful as it has additional aspects compared with those required by law: for the company it means the choice of an additional commitment in the name of food safety.
